Well dinner's ready so come on over!!
Tonight I'm doing Pan-Fried Chicken with Tomato Bacon Sauce! I'm serving it on a bed of rice, with carrots and brocolli on the side! yum yum!!
ok here's the recipe...coz I KNOW Deena will want it!!!
2 bacon rashers, chopped 1 medium onion, finely chopped 1 clove garlic, crushed 410g can tomatoes (14oz) 1/4 cup water 1 tablespoon tomato paste 1/4 teaspoon dried basil leaves 1/4 teaspoon dried oregano leaves 1/4 teaspoon sugar 15g butter (1oz) 1 tablespoon oil 4 chicken thigh fillets (though I use breast) 1 tablespoon parsley
1. Add bacon, onion and garlic to frying pan, stir constantly over medium heat for 3 minutes or until onion is soft.
2. Add undrained tomatoes, water, tomato paste, dried herbs and sugar. Crush tomatoes with potato masher or fork. Bring to boil, reduce heat, simmer, uncovered, for about 10 minutes or until sauce is thick; stir occasionally during cooking time.
3. While sauce is cooking, heat butter and oil in frying pan, add chicken, cook over medium heat for about 5 minutes, or until lightly browned and tender; turn several times during cooking. Be careful not to over-cook or chicken will be dry and tough.
4. Add parsley to tomato mixture, serve over chicken with rice or pasta.
Serves 2
My son is actually home for dinner tonight....can hardly believe it!!

Pen! It's 0400 here! It's Breakfast time! Gimme some bacon and eggs and grits Ms Thingy! Real southern heart attack-style! But that sounds soooo yummy! Thanks for the recipe! I'll try it tonight! I'm inviting my (maginary) Hunk-a-Hunk of Burning Love over for dinner! Gotta rest up for my hot date Girlie!

sound yummy but Christy cooked chicken snitzels with mash potatoes,mashed pumpkin and steamed beans,carrot,red capsicum... delicious..... chocolate for desert.... hava lovely night... Chrissy xo

Yum... is right !!! only I'm ready for desert now - and I have the best chocolate mouse with a fantastic vanilla bean yogurt on top.. also very yummy... do you have Yulla in Vic, that's who make this one, my weekend treat.

What are rashers?
Not much for cooked carrots and broc.
Bread, meat, potatoes and cheese is pretty much my diet.

How much is a rasher Pen - I'm clueless? I've printed out the recipe and plan to try it out soon tho. I just don't know whether to use 2 pounds of bacon or 2 slices or .... I love bacon tho - I could eat 2 pounds of it.
It's lunch time here - having some soup and crackers today. One of my girlfriends is coming over this evening tho and taking me out to dinner - she even wants to pay - can't wait.

Hey I often have soup for lunch....those instant ones you get in packets. I do make a yummy Thai chicken soup and another one with sweet potato and coconut. On those days when I HAVE to work soup is a good lunchtime filler! Hey going out to dinner is great...having someone else pay for it...priceless!!  |

Pen, that sounds absolute scrummy, and I am soooo hungry right now thinking of your dinner whilst looking a my lil' ole egg sandwich sitting on my knee!! 
Can you bung mine in the freezer while I just book a flight?!!!

You know me too well....of course I'd want the recipe!!! Sounds wonderful..I am guessing a rasher must be two slices of bacon! Tomato and bacon together are yummy...I get a tomato bacon salad dressing at the grocery store that is wonderful. Will try that recipe out soon!
Had breakfast with my mom and dad this morning at Cracker Barrel...a good southern style restaurant...they are leaving for NC in the morning to visit my brothers and do some house hunting around the Charlotte area; so wanted to see them before they left. They had an autumn breakfast special....WAY too much food but I made a good dent in...had grits and a small slice of country ham with my eggs (over hard is how I like them)...and the best part, biscuits with APPLE BUTTER; I just love apple butter in the fall...I brought a biscuit and some leftover apple butter with me to have for breakfast in the morning. Wow at some point I need to get back to some more healthy eating...still in vacation mode I guess!

Deena, you are so making my mouth water......biscuits oh yummy!! I loved brekkie at Bob Evans...crikey they feed you big!! Oh and I loved the burgers at Friendly's. Every now and then I go to google earth and do a scan over NC......makes me so homesick though!! |

I also like Bob Evans for breakfast...they are the only place I know that I can get fried mush. My paternal grandmother was from Pennsylvania and they eat it up there. It is like polenta...it is cornmeal and water cooked on the stove top until it is very, very thick and you can hardly stir it. You put it in a loaf pan and refrigerate until solid...then slice, dust with flour, pan fry...and serve hot with maple syrup. It is very good. Ah, memories...haven't had that in ages...wish my grandmother was still here.
Oh and I had an autumn beverage with breakfast...apple cider! I actually purchased a big jug of it at the grocery store last night. I love autumn...except that in Florida we really don't get much of one. I have to admit I am a bit jealous that I am not going to NC with my parents tomorrow...the autumn leaves will be beautiful. I will have to have someone take some pics and email them to me.

All this fried stuff though...I have to keep it at a minimum!! I only knew NC in the Spring...I bet it is so beautiful in the autumn...specially the Smokey's. As for Bob Evans, I loooooooooved their home fries!!! oh boy I'm hungry!!  |

I wouldn't mind having the recipes for those 2 soups you talk about Pen both sound really yummy. I love and make soups more in the fall and winter time - which is coming up here in the US - I make a scrumptious potato soup. Today I just had soup out of can tho - not bad and easy to make for sure. Blessings!!

hey Pen, useless tip for the day...did you know men like broccoli and carrots as their fav veges? Someone did a survey, why I dont know but there ya go! and if you eat a tomato with your meat, the vit c in the tomato helps you absorb the iron in the meat. ..that's two tips for just $19.95 and no steak knives

My son loves mashed potato! As for the tomato/meat combo....wow that's good info coz I really think I have an iron deficiency...coz I get so tired all the time. As for not throwing in the steak knives....that just so goes against the grain!!   |

Great, I had salsa and no sodium chips tonight. Ran out of food and slept in. Now y'all went and made me hungry. I used to love apple butter...mmmm. I haven't seen it in ages.
