I made this soup last night and it was so yummy, I am going to share the recipe.....
COCONUT, SWEET POTATO AND SPINACH SOUP
2 tablespoons butter 500g sweet potatoes, cut into cubes 1 onion, chopped 2 cloves garlic, crushed 1 teaspoon grated fresh ginger 1 tablespoon medium curry paste (I used a Thai red curry paste) 2 1/2 cups coconut milk juice of 1 lime 1/2 teaspoon dried crushed chillies 3 cups shredded fresh spinach salt and freshly ground black pepper
1. Melt the butter in a saucepan and fry the sweet potatoes, onion, garlic, ginger and curry paste for 5 minutes or until lightly golden.
2. Add the stock, coconut milk, lime juice and chilli. Bring to the boil, cover and simmer for 15 minutes or until the sweet potatoes are tender.
3. Leave the soup to cool a little, then puree half of it with a hand-held blender. Return the puree to the pan, add the spinach and cook for 1-2 minutes, until the spinach has just wilted and the soup has heated through. Season to taste.

Pen, is this the same as Yankee Doodle Coconut Sweet Potato Spinach Soup????
 AND what the heck is 500g in "real" measurements please AND all the blond Doodles want to know: shredded fresh spinach...how do you shred spinach? Is it like tearing it? Where is the video for this one????
 But my biggest question is~~~~~~~~ did it clear your sinuses?

I have no idea what Yankee Doodle soup is....crikey I'm an honorary American....how would I know...you should know these things!! ok 500g is half a pound....kapeesh????  yes you have to tear the spinach!! Shredded is the classy word and it's one us Aussies use all the time!!  Now get in that kitchen and rattle those pots and pans!!! 
Yes it did clear my sinuses....and a few other little blockages too!!!    |

thanks for clearing that up for me...i went shopping for the ingredients but just before i left i thought 'how the heck will i know how much 500g is???' half a pound, eh??
